The Hewing Hotel occupies a converted 1897 heavy-timber warehouse in the North Loop, opened as an independent boutique property in November 2016. It leans on the building's exposed brick and timber structure rather than a full-strip renovation, and was named Condé Nast Traveler readers' "Best Hotel in the Midwest" in 2018.

Dining & wellness

Tullibee, the hotel's Nordic-inspired restaurant, serves whole-animal butchery and smoked fish sourced from Minnesota's lakes and woods for breakfast, lunch, dinner and weekend brunch. Six floors up, the Rooftop bar offers year-round skyline views with a small pool that converts into a hot tub in winter.
