The Eve Hotel Sydney

The EVE Hotel Sydney opened on February 13, 2025, bringing TFE Hotels' newest boutique property to Wunderlich Lane, a fledgling lifestyle precinct at the junction of Redfern and Surry Hills. Built around 102 rooms, a rooftop pool and a design language sourced entirely from Australian architects, artists and makers, the hotel positions itself as a local counterpoint to Sydney's more internationally branded luxury openings.

The place

The EVE sits at 8 Baptist Street, anchoring Wunderlich Lane, a new lifestyle precinct built where Redfern meets Surry Hills on the southern edge of Sydney's CBD. The address places guests within walking distance of both neighbourhoods' cafés, galleries and independent retail, with Redfern station and the city centre a short trip away. The precinct itself is still new, developed on a former industrial site once linked to the historic Wunderlich ceramic tile works, and continues to fill in around the hotel — giving The EVE the character of an early anchor tenant in a district still finding its shape, rather than a hotel dropped into an already-established tourist strip.

The concept

The EVE is operated by TFE Hotels on behalf of owner Toga Group, and its 102 rooms and suites — spread across seven categories including Courtyard, Sunset and Wunderlich Terrace rooms — are the product of a design team drawn almost entirely from Sydney. Architect Adam Haddow of SJB, landscape architect Daniel Baffsky of 360 Degrees and interior architect George Livissianis worked alongside SJB senior associate Charlotte Wilson on a brief that was explicitly local rather than internationally styled: palettes move between soft eucalyptus greens and deep red clay tones, every room opens onto a Juliet balcony, balcony or terrace, and details such as glazed ceramic door handles and a recurring pomegranate motif reference the site's history as the grounds of the old John Baptist gardens. That local-first brief extends to art and furnishings. Works by Sydney artists Louise Olsen and Tarryn Gill run through the public spaces and guest rooms, including a large ceiling piece by Olsen above the lobby bar; sculptural lighting comes from designer Henry Wilson; and in-room amenities and glassware are supplied by Australian brand Saardé. TFE positions the property as a boutique, design-led hotel rather than a large-format lifestyle brand, and general manager Ben Mellor has described the name as a nod to "new beginnings" for both guests and the wider Wunderlich Lane precinct.

Dining & wellness

Food and beverage at The EVE is curated by Liquid & Larder, the hospitality group behind Sydney venues including Bistecca and The Gidley, which began operating the hotel's outlets in January 2025 ahead of the official opening. LOTTIE, the rooftop restaurant, serves a contemporary Mexican menu built around mezcal, set beside a 20-metre pool and cabanas with views over the Redfern and Surry Hills rooftops. On the ground floor, Bar Julius is a European-inspired lobby bar open from morning coffee through to evening cocktails, beneath a vaulted ceiling carrying one of Louise Olsen's artworks. No dedicated spa has been reported at the property.
