The Brighton Hotel Sydney – MGallery Collection opened on Botany Bay in October 2025, the result of a three-year renovation that moved the former Novotel Sydney Brighton Beach from Accor's midscale tier into its boutique-luxury MGallery Collection. All 307 rooms were redone, alongside a new Mediterranean restaurant, Ammos Brighton, from chef Peter Conistis.

The place
The hotel stands at the corner of Grand Parade and Princess Street in Brighton-Le-Sands, a beachside suburb on Botany Bay in Sydney's south, close to the airport and long associated with the city's Greek-Australian community. It occupies the building of the former Novotel Sydney Brighton Beach, directly on the foreshore, with water views from many rooms.
The concept
The Brighton reopened in October 2025 after a three-year, multi-level renovation that moved the property from Accor's midscale Novotel brand into MGallery Collection, the group's boutique-luxury label — one of the largest positioning jumps available within Accor's own hierarchy for an existing hotel. All 307 rooms and suites were redone, alongside two ballrooms and the public areas, in a coastal palette of sea-foam green, stone and timber referencing both the beachfront setting and Brighton-Le-Sands' Greek heritage. The result targets a resort-style leisure and events guest rather than the airport-transit traveller the Novotel had mostly served.
Dining & wellness
The signature restaurant is Ammos Brighton, a Mediterranean/Greek dining room led by chef Peter Conistis; the hotel also has indoor and outdoor pools and a fitness centre. No dedicated spa reported.
