Curio Collection by Hilton Toronto Distillery District, Canada's first Curio Collection property, is converting an 1890 whisky rack house — the last heritage building left in the Distillery District — into a 392-room hotel with a new 31-storey tower behind its preserved façade. Construction, underway since 2022, has run well past its original timeline, with an opening now expected late 2026.

The place
60 Mill Street, in the Distillery Historic District at the southeastern edge of downtown Toronto.
The concept
The hotel occupies a rack house built in 1890 to store up to 15,000 barrels of whisky for the Gooderham & Worts distillery — the last heritage building in the district still to be converted, and never previously used as a hotel. Easton's Group of Hotels bought the six-storey structure in 2018 and is building a 31-storey tower behind it, keeping the rack house's exterior as the base three floors; it will be the first Curio Collection by Hilton property in Canada. Construction began in 2022 and has run considerably longer than the roughly three years first announced — recent listings still show the project in progress, and the opening date should be treated as approximate until Hilton confirms a firm date.
Dining & wellness
Plans include a main-floor lobby, lounge and restaurant, a rooftop bar and restaurant with a patio overlooking Lake Ontario and the Distillery District, a spa, a gym and ballroom/conference space.
