The concept
The project was announced and developed for years as a Canopy by Hilton before ultimately opening in May 2025 under Hilton's Curio Collection banner as Hotel Bourré Bonne, a five-story, $75 million new-build managed by Driftwood Hospitality Management, which entered the Kentucky market with this assignment. The name and concept lean into a deliberately French-meets-bourbon identity, playing off Louisville's bourbon culture with a Gallic dining program.
At 168 rooms it is one of downtown's larger recent openings, with over 11,000 square feet of flexible ballroom space aimed at the convention and meetings market that the neighboring Whiskey Row corridor otherwise lacks in newer inventory.
Dining & wellness
Steakhouse Bourré Bonne serves French-inspired dishes paired with an extensive bourbon and wine list on the ground floor, with a separate Rooftop Bourré Bonne bar and lounge; both dining venues are operated by Bellé Noble Entertainment Group. The hotel also has a seasonal rooftop pool and a fitness center with a juice bar.
