DoubleTree by Hilton Hobart
Tasmania's first Hilton hotel, a nine-storey, 206-room DoubleTree on Macquarie Street that replaced a planned Novotel.
Open · October 2024
DoubleTree by Hilton Hobart opened in October 2024 on Macquarie Street, in the city's central business district. It is Tasmania's first Hilton hotel, with 206 rooms over nine storeys, and it is owned by Fragrance Group, the Singapore-based developer. The project did not start as a DoubleTree. Plans approved earlier called for a Novotel, and Fragrance Group confirmed in 2024 that the operator had changed while the building was going up.

The place
Macquarie Street runs through the centre of Hobart's business district, a few blocks from the Derwent River waterfront. From the upper floors the hotel looks across to kunanyi/Mount Wellington on one side and the river on the other.
The address puts guests within walking distance of the waterfront and the city's cultural attractions, the point the operator stresses most.
The concept
The development cost about A$65 million and was built by Hutchinson's Builders, a Hobart contractor. Besides the rooms, the plan included a function centre, a restaurant, a pool and basement parking. Construction was reported on track for completion in 2024 as late as May of that year, and the hotel opened that October.
The 206 rooms fall into seven categories. The 80 deluxe rooms are the largest standard type, with up to 33 square metres of floor space. Rooms have floor-to-ceiling windows, rain showers, 50-inch televisions, Bluetooth speakers and work desks. Guests are handed the brand's chocolate chip cookie on arrival, a ritual every DoubleTree repeats.
The heated indoor pool, a sauna and a gym occupy the wellness side, and there are two meeting spaces for events. About 60 jobs were created at opening.
The hotel's manager said at the opening that the aim was to give the brand a uniquely Tasmanian flavour, and the Tasmanian Premier called the project a milestone for the state, adding more than 200 premium rooms to its tourism stock.
Dining & wellness
Leatherwood Restaurant serves breakfast, lunch, dinner and room service, and is open to the public seven days a week. The menu is modern Australian, with local and seasonal produce as the stated focus. The name refers to the leatherwood tree, source of Tasmania's best-known honey.
The hotel also has a bar. No chef has been named in the opening material.

May 11, 2024: Fragrance Group, the Singaporean developer building a nine-storey, 206-room hotel on Macquarie Street in Hobart, confirmed that the hotel would open as a DoubleTree by Hilton rather than the Novotel first planned, the change reflecting a new operator. The A$65 million project includes a function centre, a restaurant, a pool and basement parking, and was reported on track for completion later in 2024. Revised signage for the DoubleTree name needed approval from the City of Hobart council, because the change altered the size and position of the signs.
