Ruby Hotel Cork

Ruby Hotel Cork is a planned 180-room hotel that Starstone Property Group won Cork City Council approval to build behind Lapps Quay, in a €50 million project that would be Ruby Hotels' (IHG) second Irish property after Ruby Molly in Dublin. Construction is expected to start in the third quarter of 2026, with no opening date yet announced.

The place

The hotel is planned for a site to the rear of the former Eircom building at 5 Lapps Quay, at the junction of Lower Oliver Plunkett Street and Connell Street in Cork city centre.

The concept

Starstone Property Group secured Cork City Council approval for a €50 million, five- to ten-storey Ruby Hotel on a 0.07-hectare site, following demolition of an existing vacant building. It would be Ruby Hotels' (acquired by IHG in 2024) second Irish property after Ruby Molly in Dublin, applying the Munich-based brand's 'lean luxury' format — compact rooms paired with a gym and contemporary dining and lounge space — to the Cork market for the first time.

Dining & wellness

Planned facilities include a gym and a contemporary dining space in the ground-floor public areas; specific F&B operators have not been named.
