Hotel Daphne

Hotel Daphne opened December 5, 2025, on West 20th Street in Houston Heights, the latest boutique property from Bunkhouse Hotels under the JdV by Hyatt banner. The 49-room hotel occupies a new five-story brick building wrapped around mature live oaks, with Greek-mythology-inspired interiors and an all-day Italian restaurant, Hypsi, led by two-time James Beard nominee Terrence Gallivan.

The place

Hotel Daphne sits at 347 West 20th Street in Houston Heights, a historic neighborhood of 19th-century bungalows, vintage shops and chef-driven restaurants a few minutes north of downtown. The address puts guests within walking distance of the 19th Street shopping corridor, the Heights Theater and White Oak Music Hall, in one of Houston's most walkable districts and an area with its own 1890s planning history as a utopian community. It is Bunkhouse Hotels' second Houston property after Hotel Saint Augustine, extending the group's footprint in a neighborhood that has become a proving ground for independent hospitality and retail rather than a conventional downtown hotel corridor.

The concept

Hotel Daphne is operated by Bunkhouse Hotels, the Austin-based boutique group acquired by Hyatt in October 2024 and now folded into the JdV by Hyatt collection. The property is a ground-up, five-story building designed by architect Timothy Blanchard of Blanchard A+D, with landscape architecture by McDugald Steele built around the site's existing live oaks. The exterior combines painted brick, stepped parapets, dark steel sash windows and soft gray shutters, a palette meant to bridge the Heights' residential scale with its industrial history. Interiors were designed in-house by Bunkhouse, with roughly 80% of furniture and decor selected in advance and the rest left open, according to head of design Tenaya Hills. The hotel takes its name from Daphne, the nymph of Greek mythology who transformed into a laurel tree to escape Apollo's pursuit — a story Bunkhouse uses to frame a design tension between allure and restraint, desire and danger. That reads through custom details such as a circular modular lobby sofa beneath a vintage Murano chandelier, Trebah Velvet headboards inspired by English gardens, Sferra linens and green Fireclay-tiled bathrooms. Owner Ben Ackerley rotates roughly 160 pieces from his family's art collection through the property, curated by former Contemporary Arts Museum Houston director Hesse McGraw, including a 15-by-8-foot commissioned work by Texas artist Matt Kleberg in the restaurant. Rooms range from double-queens to a 1,150-square-foot Penthouse Suite, with rates starting around $359 a night. A pool, outdoor bar and ten poolside bungalow suites are planned to open in spring 2027.

Dining & wellness

Hypsi, the hotel's all-day restaurant and lounge, is led by chef Terrence Gallivan, a two-time James Beard Award nominee and Michelin-starred alumnus of Alto in New York, previously behind Houston's The Pass & Provisions and Montrose's Elro. The menu is built around Italian-style aperitivo with Gulf Coast ingredients: a tableside mozzarella cart, housemade pastas including squid ink radiatori and lumache alla vodka, Duroc pork Milanese, and a pistachio pie, paired with Italian wines and craft cocktails. Service runs breakfast through dinner, weekend brunch and happy hour, spilling into a vine-covered courtyard. Beyond dining, the hotel offers a library with board games, a small private event space, and a retail shop; a dedicated pool and bar are still to come.
