The Clayfield

The Clayfield, a 102-room Unbound Collection by Hyatt property, has opened at the gateway to Old Town Niagara-on-the-Lake, anchoring the new Clayfield Commons district. Designed by Montreal's Sid Lee Architecture around the region's clay-soil geology, it brings the town its first rooftop bar and a chef-driven restaurant, Terrain.

The place

18 Clayfield Commons, at the corner of Niagara Stone Road and Niven Road, at the gateway to Old Town Niagara-on-the-Lake — anchoring Clayfield Commons, a new district of restaurants, cafés and retail around a public square, next to the existing Village residential community and Stratus Vineyards from the same developers.

The concept

Canadian entrepreneurs David Feldberg and John Hawley — also behind the adjacent Village community and the LEED-certified Stratus Vineyards — developed this 102-room hotel as the anchor of Clayfield Commons, a new walkable district at Old Town's edge. Despite the name, "Clayfield" is not a reference to Brisbane's Clayfield suburb; it comes from Niagara's own layered clay soils, a piece of local geology that also shows up as a design and spa motif. Montreal firm Sid Lee Architecture designed the building around vertical wood elements and layered concrete meant to read as integrated into the landscape, with interiors following a seasonal narrative — winter-toned guestrooms, a spring-inspired lobby, a harvest-toned restaurant and a summer-toned spa. Rooms opened in late summer 2026, with the restaurant and rooftop bar following in September — the town's first hotel built around a rooftop format rather than a historic-inn conversion.

Dining & wellness

Terrain, the flagship restaurant developed by Toronto's Ascari Group under Niagara-native chef Joel LaBute, serves seasonal menus built on Ontario producers. A quieter Lobby Bar and The Rooftop — described locally as the town's first rooftop bar — round out the food and beverage program, alongside a spa built around the region's clay-soil treatments.
